Peanut Butter Sandwich Cookies

1 c butter flavored shortening
1 c creamy peanut butter
1 c sugar
1 c packed brown sugar
1 t vanilla
3 eggs
3 c all-purpose flour
2 t baking soda
1/4 t salt

Filling:
1/2 c creamy peanut butter
3 c confectioners sugar
1 t vanilla
5-6 T milk

In a mixing bowl, cream the shortening, peanut butter and sugars. Add vanilla. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture. Shape into 1 inch balls and place 2 inches apart on ungreased sheet. Flatten to 3/8 inch thickness with fork. Bake at 375 degrees for 7-8 minutes or until golden. Cool on wire racks. In a mixing bowl, beat filling ingredints until smooth. Spread on half of the cookies and top each with another cookie.
