1 pkg (8 oz) cream cheese, softened to room temperature
¼ lb unsalted butter, softened to room temp
¾ c confectioners sugar
1 t vanilla
2 medium golden delicious apples, peeled, cored and cut into ¼ inch thick slices
¼ c granulated sugar
½ t ground cinnamon
¼ t fresh nutmeg, grated
1 dozen frozen scone rolls, thawed
Vegetable oil for frying
In a small bowl, beat together the cream cheese, butter, confectioners sugar and vanilla until smooth. In another bowl, toss the apple slices with the sugar, cinnamon and nutmeg. On a slightly floured surface, roll out each thawed scone. Spread cream cheese mixture inside center of each scone. Top each with apples, then roll into a pocket, pinching the ends to close. Place in hot 375 degree oil and fry over low heat until golden brown about 2 ½ minutes. Drain on paper toweling and sprinkle with confectioners sugar, if desired. Serve warm.
